Preserving food the easy way



A quick encouragement for those of you preserving food. Making and freezing basil pesto is super easy to do and makes for many easy meals in summer and winter. We’ve been buying big $6 bags of basil at the market each week, blending them up with a few cloves of garlic, a handful of walnuts, enough olive oil to mix and Parmesan and salt to taste. Then I freeze it in ice cube trays, popping the cubes out into a Ziploc once they’re frozen. We’ve already used the pesto a number of times when we’re starving and pesto pasta is the quickest option. Just toss a few frozen pesto cubes into the warm, drained pasta and add garden veggies and Parmesan.
